Financiers

Small buttery almond cakes with a great balance between the nutty taste from the butter, the almond and the sweetness of the sugar.

Another cake that goes perfectly with a cup of tea or coffee, or just as a quick snack while stuck in the traffic (eating while driving is not permitted, so we never said that…)

Because we love the stories behind the cakes, here is the little story:

This oval cake was invented by the Nuns of the order of the Visitation in Nancy in Lorraine (French region) and called "Visitandines" in the 17th century.

Around 1890, a Swiss baker found the recipe and sold them in his bakery, which was next to the stock exchange place. The customers there  were mainly financiers (financial advisors) who were after a little cake they could quickly and easily eat, enjoyed and loved them. So the baker decided to change the shape into a gold bar and called them "Financiers".

Madeleines

These little sponge cakes flavoured with lemon zest are a french classic loved by both children and adults.

Little Choux pastry puffs topped with pearl sugar. Once you have tried them you can’t stop as they are so moreish!

Choux à la crème

It is simply a choux pastry, topped with “craquelin” (a cookie dough like made of butter, sugar and flour) and filled with a freshly made Chantilly.

It is light.

It is crunchy.

It is tasteful.
